Chocolate Banana Cake

Some of the best recipes happen when you need to 'use up' something in the house.  In this case, there were 3 things-- some chocolate milk that had gone sour, a bunch of bananas that were overripe, and the tail end of a jar of mayonnaise. 

Several years back, when I was still in high school, I told my mom what I would really like as a graduation gift was a card file of her recipes.  She made one, painstakingly putting one card at a time into our manual typewriter (OK, this was more than several years back) and typing out each recipe.  When the next sibling graduated, 2 years later, she had realized there was a way to type the recipes on the computer, and that way the info was saved for and could be printed an number of times without having to retype them. The recipe card in the photo below is from one of that second round of recipes she gave me. As you can see, it makes a big cake. 11x15. So I've scaled it down to fit a 9x13, and tweaked the leavening to use both baking soda and baking powder, which combination I've found to give slightly more consistent results.

Have you ever had the boiling-water chocolate cake before?  It's a wonderful, very moist cake. It looks to me that my mom simply took that recipe and adjusted it to include mashed bananas. Chances are high that she was simply being creative with what needed using up, too.

For the cake this week, I made it using mostly whole-wheat flour, for the nutrition, fiber, and flavor. I also used a blender to streamline the mixing steps.  The strange-sounding frosting really does work!  It's modified from the Sauerkraut Cake recipe posted much earlier.

Chocolate Banana Cake

Heat oven to 375 degrees F, and spray a 9x13 pan with nonstick cooking spray. (This can also fill 2 9" round cake pans instead.)

In a large bowl, stir together
3 cups flour (I used 2 c. whole wheat flour, 1 cup all-purpose flour)
1/4 to 1/3 cup cocoa powder
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt


Meanwhile, melt
1/2 c. butter
and set aside. Measure 1 cup of water and bring it to a boil in the microwave or on the stovetop. Set aside.

In a blender, combine
2/3 cups sour milk (or milk mixed with 1 Tbsp. lemon juice or vinegar)
2 eggs
2 large overripe bananas, or 3 medium/small ones
2 cups sugar

Mix until smooth. Pour over the flour mixture, add the melted butter, and stir well. Pour the boiling water over the top, and mix in thoroughly. Bake at 375F for about 30-35 minutes, or until the top springs back when pressed lightly with a finger.

Chocolate Mayonnaise Frosting
1 bag (11-12 ounces) chocolate chips (I used semisweet)
2/3 c. mayonnaise

Melt the chocolate chips in a heatproof bowl in the microwave; heating for 1 minute at a time and stopping to stir.  This took about 2 minutes in my microwave. 

Add the mayonnaise, and stir to combine.  Spread over cake.
Notes:
If you put the frosting in the fridge, it will set up very firmly. Too firm to spread. If you need to soften it, microwave for 15-30 seconds and stir.  
If you don't have mayonnaise-- remember I said we were at the tail end of the jar?-- use yogurt instead. I had only half the mayo needed, so used that, and made up the difference with some strawberry yogurt sitting in the fridge.

Week 16, Anything-Goes Muffin recipe

Your week 16 assignment:  Buy for Three.

Two houses, four wards, and almost ten years ago, a friend and I were on a quest to find two things--
the perfect pancake recipe,
and a perfectly adaptable muffin recipe. 

We measured, stirred, cooked, talked, shared and compared.  (I still think the ‘Foolproof Pancake’ recipe is tops.)  And after all that, Laura compiled what I learned about muffins with what she learned about muffins, and the “Anything Goes” Muffin recipe is the result. 

It’s a basic recipe that you can customize- whether sweet or savory, it will make good muffins.  Lemon-blueberry, bacon-cheese mufins, spiced applesauce muffins, oatmeal cinnamon muffins, chocolate raspberry or chocolate banana muffins, and much more.  Do you have a couple overripe bananas sitting on your counter?  This will help you use them up. How about a wrinkly apple that has gone mealy?  It will be delicious chopped or shredded into muffins.
After you've used this recipe-- or formula-- a few times, you'll get to where you don't even need the recipe to make any kind of muffin you can think of.

Reducing Food Waste-- What to do with Sour Milk -- Make Cheese and More!

A big part of food management at home is reducing waste.  There are many ways to do this. 

Serve only what you’ll eat.  Refrigerate, freeze, or re-purpose leftovers. Or share with a neighbor.  A friend of mine regularly fixes a plate of leftovers immediately after dinner, and takes it across the street to an elderly widow.

You can use a lot of your food prep trim - lemon peels can be used to flavor things, clean kitchen disposals, make homemade lemon extract and lemon sugar. Shriveled lemons, orange, grapefruit, or limes are good for making marmalade. Tops and bottoms of celery can be frozen and saved to make broth or to add flavor when you cook dry beans. Broccoli stems can be trimmed and cooked along with florets, or chopped and added to salad for a nutritious crunch.  Things you can't re-purpose or eat can be fed to chickens, and many can be added to the compost pile.

If you wonder how much improvement you could make-- and how much money you could save on food!-- remember this:
“What’s measured gets managed.”

For one week, notice, measure, and take notes on what gets thrown out. 
 Aramark, a food service contractor, began doing this, and has reduced their food waste by nearly half (44%). For them, that was 479 tons of food saved from being sent to landfills. 

This is an interesting article on what some restaurants have done to reduce waste. Most of what they've tried works in homes, also.

You may have heard that in the US we waste 40% of our food-- 63 million tons of it per WEEK. But do you know where that waste is happening?

The largest share of it (43%) is happening in our homes-- 27.1 million tons of it per year. That's about 51 ounces per person, per week, or 3.17 pounds. If my family was average, that would mean the 8 of us currently at home would be throwing out 25 pounds of food every week. Shocking!

That would count food trimmings when I'm cooking, vegetables and fruits that went bad before getting used, whatever is wasted on a plate, leftovers that didn't get eaten in time, and anything that got burned too badly to eat. :)

We waste much less than average, though, and truthfully throw out very little. We belong to the "Clean Your Plate Club" that my grandma and mom talked about; all but the tiniest kids have learned to only serve up what they are willing to eat. We serve the 2- and 4-year-olds their food, and only in small amounts. If they want more, they get it after the other food on their plate is gone. Usable trimmings get saved for soup or broth. Unusable ones go to the chickens. Produce that went bad gets washed and trimmed; any good parts are used, bad parts go to the chickens. (We call these, "chicken treats"!) Bananas and apples that are getting mushy get put in smoothies or in baked goods. We understand what "expiration" dates mean on food, and so use our senses of smell, sight, and taste to know if they're still fine. (And they ARE, for much, much past those dates.)   When I miss a container of leftovers in the back of the fridge and find it after a week, that goes to the chickens too. Somehow we had THREE gallons of milk go sour this week, so they were turned into quick cheese; the whey went in muffins and bread. 

Let’s look at how to reduce waste with one item- MILK.

What can you do when milk goes sour?  This applies whether it happens before the ‘sell by’ date or after. Why does milk go sour? Does that mean it will make you sick?


Milk is high in lactose, which is the natural sugar found in milk.  When bacteria are introduced to the milk, they eat the sugars and convert them into lactic acid (=fermentation).   This means the milk has less sweetness, and more sourness.   This is the process used and controlled when making yogurt, cultured buttermilk, cottage cheese, and more.  

Some bacteria can make you sick, others are perfectly safe.  Because you don’t know which bacteria made your milk go sour, using uncooked sour milk has a possibility of making you sick.  Cooking with it, however, kills the bacteria, and is therefore safe.

Ways to use sour milk
 

-use it in place of buttermilk in pancakes, biscuits, chocolate cake, cornbread, wheat   bread, or any other recipe. 
-freeze it for using in recipes next time.

-pour a cup around your garden plants- it’s good fertilizer!  Milk is used to help grow     giant pumpkins, and helps prevent blossom end rot in tomatoes.  
- feed to chickens, pigs, or dogs (boil it first if you’re concerned for your dogs)
- make CHEESE! 


That’s right, you can take sour milk and turn it into cheese.  The fastest, easiest ones to make are cottage cheese and Queso Fresco, a mild fresh cheese. The method for both is the same until after the cheese curds are drained.

One gallon of milk will make about one pound of cheese.
 

Cheese from Sour Milk
You will need:

Sour milk
Salt
Vinegar or lemon juice—maybe.
 
Spray the inside bottom of a heavy saucepan with nonstick cooking spray.  Heat over low for about a minute to form a coating-- this helps the milk proteins NOT stick to the bottom of your pan.(You can skip the spray and still be fine.  Just stir more.)  Add your sour milk, and heat over medium-high until the milk starts to steam, stirring often.  If your milk is sour enough, it will start to curdle-- separating into curds and whey.  (Remember "Little Miss Muffet"?  Curds are the white clumps, whey is the yellowish liquid left behind.)  If your milk isn’t separating on its own, add up to ¼ c. of vinegar or lemon juice, a few DRIPS at a time, stirring after each addition.  The milk will immediately start to curdle.  Remove from heat and let it rest for one minute. 

Put a fine-mesh sieve over a large bowl and pour the curds and whey into the sieve.  Move the sieve to the sink, and rinse with hot water to get the acid out.  Rinse with cold water for about a minute, until no more whey is in it.  Add salt, ½ tsp. per cup of curds.

Cottage Cheese-
For each cup of curds, stir in 2-4 Tbsp. of yogurt or sour cream.  Cover and refrigerate.  This works great in recipes like lasagna.  I can make a batch of cottage cheese (using dry milk powder) faster than I can drive to the store and purchase it. (That’s saying something; the store is about a mile away.)
 
Queso Fresco-
After draining, rinsing, and salting the curds, put them in a couple layers of cheesecloth or on a flat (non-terrycloth!) dish towel.  Twist the top of the fabric closed, and tightly squeeze the cheese over the sink.  More liquid will come out.  Attach the twisted part of the towel (your ‘bag’) to a cupboard handle, and set a bowl under it to catch any more drips.  Let hang overnight.

If you want a nice flat, round shape, instead of hanging the bag, set it inside something round—a clean, empty 29 oz peach can, a food storage container, or whatever you have.  Set something on top of the cheese, and put something heavy on top of it to press it down.  Let that sit overnight.

Now you have leftover whey - a yellowish, clear liquid that contains protein, carbs, calcium, phosphorus, and several B vitamins.
 
The resulting whey in this recipe is ‘acid whey’ (versus ‘sweet whey’) because it is a little acidic.  How to use it?  Very much as you would sour milk or buttermilk.  Use in most recipes that call for water or milk.  Use it as a tenderizing marinade for meat; add flavors and spices as you like.  Use it to make whey lemonade, feed it to animals (chickens love it!), or as a last resort, pour in your compost bin.  It’s also reportedly used as a great hair rinse, but I haven’t tried it yet.

Pineapple Coconut Bread Pudding

Pineapple-Coconut Bread Pudding 
1 (20-oz) can crushed pineapple
¾ cup sugar, divided
2 c. cream or coconut cream*
½ tsp. salt, divided
1 loaf stale French bread, cut in 1" cubes, or a pound of other bread, cubed
1/2 tsp. cardamom
3-4 eggs 
1 c. whole milk or coconut milk
2 tsp. vanilla
1/2 c. shredded coconut

If your bread isn't already stale and dry, put the bread cubes in the oven at 375 until they're dried out.  
Make a caramel sauce- combine 2 Tbsp. juice from the canned pineapple with 1/2 c. sugar in a saucepan.  Heat on high until brown, stirring often.  Add 3/4 c. cream; stir until the caramel chunk has dissolved.  Add 1/4 tsp. salt.  Pour about half of this into the bottom of a greased 9x13 pan.  Save the rest.
Mix together bread, undrained pineapple and cardamom.  Dump into a 9x13 pan.  Using the same bowl as before, beat the eggs, then stir in 1/4 c. sugar, the remaining cream, milk, vanilla, and 1/4 tsp. salt.  Mix until  sugar dissolves.  Pour all of this over the bread and let sit for 5-20 minutes to soak.  Sprinkle the coconut over the top.                                          

Bake at 375 degrees for 30-35 minutes, until center is set.  Serve warm, with a little of the remaining caramel sauce drizzled on top.

*If you don't have cream, use milk instead, for a total of 3 cups.  Also melt 1/4 c. butter and beat it in with the eggs.

Turkey Ramen Cabbage Salad

Most salads like this use so much dressing that there's a pool of it at the bottom of the bowl.  And the dressing is about all you taste.  
Not this one.  There's enough oil in the salad to help you unlock those fat-soluble vitamins; both cabbage and cashews are very high in Vitamin K.  And you can actually taste the cabbage, in a way that accents only its best features.  

If you have any left over, even though the noodles will not stay crunchy by the next day, the cabbage does.

Cabbage Ramen Salad        Serves 4-6.  Or two who really, really like it.

1 tsp. olive oil
1 package Ramen noodles
2 Tbsp. olive oil
1 Tbsp. rice wine vinegar or apple cider vinegar
1 Tbsp. honey or sugar
1/2 tsp. salt
1/4 - 1/2 tsp. black pepper
1/2 tsp. ginger OR 1 1/2 tsp. chopped crystallized ginger OR 1 drop ginger essential oil
1 small cabbage, shredded, OR a 14-16 oz package coleslaw mix (cabbage and carrots)
2 green onions, chopped
1 c. cooked turkey or chicken, diced
1/2 c. cashews, optional

Heat 1 tsp. olive oil in a large skillet on high heat.  Break the Ramen noodles into small pieces and add to the hot oil.  (You won't need the flavor packet for this recipe.)  Stir dry noodles constantly for about 2 minutes, until some of the noodles start turning a toasty brown.  Remove from heat and set aside. 

In a medium bowl, combine remaining 2 tbsp. olive oil, vinegar, honey/sugar, salt, pepper, and ginger. Stir well to combine.  Add the cabbage or coleslaw mix, green onions, turkey/chicken, and cashews.  Stir thoroughly, until no puddle of dressing remains on the bowl's bottom.  Serve right away for the crunchiest noodles.

Individual Tamale Pies

The sauce in this filling is from my great-grandmother, who I hear was an excellent cook. She lived in the ‘Mormon’ colonies in Mexico, left in 1912 to avoid Pancho Villa and other warring factions, returned after the Revolution, and earned money through millinery (making hats) and sewing.  Her last few years were in Arizona, where she cooked and sewed at the LDS Mesa temple.   This recipe was her enchilada sauce, only she used 3 cups of water and 3 Tbsp. chili powder when using it over enchiladas, since more liquid is needed for those.  

These are gluten-free if you use cornstarch and not flour in the filling.  Using shredded meat instead of burger makes these a little more authentic, but ground meat is awfully convenient.  Unless you happen to have some leftover roast available to shred.

Individual Tamale Pies 
Makes 12 muffin-sized ones, or can be made into a 9" pie pan

Crust:
2 c. masa harina  (OR use 1 c. cornmeal and 1 c. flour)
1/2 tsp. salt
1/4 c. coconut oil or other fat (oil, butter, lard, etc)
about 3/4 to 1 cup water

Preheat the oven to 400 degrees.  Mix all together to form a moderately thick dough.  Grease 12 muffin cups.  Shape a ball a little bigger than a ping pong ball (3 Tbsp. dough), then press dough in a muffin cup, making a layer about 1/4"- 3/8" thick.  Repeat until finished.  Set aside.  

Filling:
2 cups cooked burger or shredded beef, pork, or chicken
8 oz. can tomato sauce
2 Tbsp. butter, optional
1/2 tsp. salt
1 Tbsp. sugar
2 Tbsp. chili powder or to taste
1 Tbsp. cornstarch OR 2 Tbsp. flour

 Mix together the meat, tomato sauce, butter, salt, sugar, and chili powder, and bring to a boil.  Stir the cornstarch or flour into 1-2 Tbsp. water,  to form a slurry.  Gradually mix the slurry into the boiling mixture, cook and stir until thickened, about a minute.  Taste it and add a little more salt if you like.

Spoon 1/4 cup of filling into each of the lined muffin cups.  Bake for 15-20 minutes, until the crust is set and the filling just starts to bubble around the edges.  Let sit for a couple minutes, then remove them by placing an upside-down cookie sheet on top, then flipping the whole thing upside down (see slideshow below).  

Serve with plain or with shredded cheese, sour cream, chopped tomatoes, lettuce, or anything else that sounds good.

Leftover roast?  Barbecue beef!

A quick way to have tender, barbecue pulled beef is to start by having a roast a day or two before.  

On Sunday, I cooked a nearly 4-pound roast.  Once it was done, and before my family could dive into it, I cut it in half.  The first half was carved into slices for dinner.  The second half went in the fridge for another day. I used some storebought BBQ sauce this time, but if you'd like to get a recipe for a simple from-scratch sauce, see Mom's Barbecue Sauce.


Today's version was served over fresh rosemary bread made with a little bit of orange marmalade mixed in.  That was a delicious combination- the bread, rosemary, orange, and barbecue!

Weeknight BBQ Beef

1 1/2- 2 lbs. cooked roast (you can use burger if you don't mind a different texture)
1 cup water
1 cup bottled barbecue sauce*

Combine in a large saucepan with a tight-fitting lid; simmer 30 minutes or until tender.  Shred meat using two forks.  The meat will absorb more of the liquid as it cools some; if it's too thick, add more water; if too thin, simmer a few minutes with the lid off to let water evaporate.

That's it!

*For a less sweet sauce, use 1/2 c. plain tomato sauce and 1/2 c. bottled BBQ sauce

Leftover Cheese Ball?

You know how they say "great minds think alike"?   Three neighbors gave me cheeseballs as a Christmas gift.  One of them (Juliette's) was so good I made a batch of Juliette's Green Chili Cheese Ball to give out (and eat too).  The result was that I had a tad too much cheeseball in the fridge.  Granted, it will last a couple weeks if wrapped well- 

but I also had some leftover smashed potatoes.

And the two leftovers turned out to make a beautiful couple.  What's a cheeseball?  Cream cheese, shredded cheese, seasonings... all stuff that goes well with potatoes.

Maybe you'll find a cheeseball on clearance at the grocery store, or maybe get handed the leftovers at a party, or maybe you'll make one...

At any rate, here's a new favorite side dish.  I cooked some leftover-from New-Year's-Eve sliced summer sausage to go along with it, and served with a salad and sliced apples.  I'd even eat it as a main dish; we often cook meatless meals.  (It's cheaper.  And probably healthier.)

Leftover Cheese Ball Potatoes
4-6 cups mashed potatoes
1/2 cup (4 oz) leftover cheese ball
2 eggs (these make the casserole puff as it cooks, plus adds protein)

Mash everything together and spread in an 8x8 pan.  Bake uncovered at 350 degrees for 45 minutes.
OR, to make it faster, reheat the mashed potatoes in the microwave before adding everything, bake at 375 degrees for 20 minutes, then move it to the top rack in the oven.  Broil for 2-4 minutes (check at two minutes!!), until browned on top.

Caramel Pumpkin Bread Pudding

About six years ago I discovered my boys had a vocabulary problem.  They were using one word to describe everything that tasted good: 'heavenly'.
This bothered me for two reasons-  one, I'm sure heaven is much better than the best food, and two, they weren't expanding their vocabulary.  This was a perfect time.  So we pulled out a thesaurus and looked up 'delicious' to come up with a new word to use.  'Toothsome' had them rolling on the floor laughing, so that became the new favorite.  
I've discouraged them using 'heavenly' very often- but I'll tell you, that was the first word that popped into my head (I didn't say it!) when the first spoonful of moist, custardy, caramel-y, pumpkin dessert hit my tastebuds.

This is a modified version of Caramel Bread Pudding.  (The link has other ways of using up stale bread, too.)  The spices in this play a supporting role to the pumpkin flavor: just enough there to help you notice the pumpkin, not the spice.  If you want to taste the cinnamon, double or triple the amount here.

Caramel Pumpkin Bread Pudding- fills a 9x13 pan

15 slices good-quality white bread, cut into 1” pieces (about 16 cups or 20-24 ounces)- baked until crisp (about 10 minutes at 450 degrees)
1 ½ sticks butter
2 cups light brown sugar
1 cup heavy cream or evaporated milk
¼ c. honey or corn syrup  
5 tsp. vanilla, divided
2 1/2 c. half-and-half, or use the last ½ cup evaporated milk from your can (above); use whole milk for the remaining 2 cups here.   
5 large eggs
1 c. pumpkin puree
1/2 tsp. cinnamon  OR 2 tiny drops cinnamon essential oil
1/4 tsp. ground cloves OR 1 tiny drop clove essential oil
1/2 c. toasted nuts, optional

Melt butter and sugar together in a saucepan on medium-high heat.  Stir about 4 minutes, or until bubbly and golden.  Remove from heat and stir in cream or evaporated milk, corn syrup, and 2 tsp. vanilla.  Pour one cup of this caramel into a greased 9x13 pan.  

Set aside one more cup of caramel, to use as topping later.  

To the remaining caramel, add the half-and-half (or mixture of evaporated milk and whole milk).  Beat the eggs together, then whisk in pumpkin, cinnamon, and cloves.  Whisk in the half-and-half mixture.  Add remaining vanilla.  Fold in the bread, and let sit until soaked through, about 20 minutes. Meanwhile, heat oven to 350 degrees. Put bread mixture into the 9x13 pan, bake about 40-45 minutes, until the top is crisp and the custard is barely set.  Sprinkle with toasted nuts.  Serve warm, with the reserved cup of caramel drizzled on top.

Bread Crumbs

If you're making homemade bread, you're bound to have a few crumbs.  Most of the crumbs come from slicing the bread, but there are always a few in the bottom of the empty bread bags, too.

It's common to just shake them into the sink or the garbage, but is there anything else!

Oh, yeah.

Since they're already dry, they don't spoil if kept fairly airtight.  I scoop them into a plastic container with a lid and save up until there's enough to do something with them.

Add to hamburger to extend it a bit
Use in  Meatballs
or Zucchini Cakes
coating for Chicken Nuggets

You can even use them as a substitute for oats or flour in recipes- 
1/2 c. crumbs = 1/2 c. rolled oats, 
1/2 c. crumbs = 1/4 c. flour

Or use them in place of graham cracker crumbs for a pie crust.  See below.

Crumb Crusts
1 ½ c. graham cracker crumbs 
¼ c. sugar 
5-6 Tbsp. melted butter 

Stir together crumbs and sugar, mix in butter. Press firmly and evenly in a 9” pie pan. Chill 1 hour OR bake at 375 degrees 6-9 minutes, til edges are brown (and it smells wonderful).  
Use a blender to crush the cookies/crackers, or a cereal box liner or big zip top baggie and a rolling pin
Breadcrumb crust:use dry breadcrumbs, increase sugar to 1/3 c. You’d never know!
Chocolate Crust: use 1 ½ c. crushed chocolate cookies (take out creme filling), don’t use the sugar in the crust recipe.
Gingersnap Crust: use all gingersnap crumbs or part gingersnap, part graham. Leave out sugar.
Nut crust: add 1/3 c. finely chopped pecans, almonds, walnuts, or other to any crumb crust.
Vanilla Crust: use crushed vanilla wafers, leave out the added sugar.

Leftover Tortilla Soup

They are the bane of some people's existence, the best friend of others.  Some people turn them into casseroles, but they often turn into soup at my house.

What are they?

Leftovers.

Yup, love 'em or hate 'em, we often have 'em sitting in the fridge or pantry.  That last half-cup of gravy, a lonely bowl of chili, a stack of day-old (OK, maybe several-day-old) corn tortillas...

They call out to be useful.  To be loved.  To be eaten.  Maybe disguised first.

Dinner tonight was Tortilla Soup, sort of a Mexican twist on chicken noodle soup.  So how does this tie into using leftovers?  Those dry tortillas got cut into strips, then toasted in the oven while the soup cooked.  The soup itself was made using water, some Mexican-type fat free salad dressing (like a watery lime-cilantro salsa, a great flavor base), a cup of leftover meatless chili (for fiber, heartiness, and deeper flavor), that aforementioned 1/2 cup of gravy (providing a little body and more chicken flavor), a package of frozen cooked turkey from just after last Christmas, and a can of corn (sweetness, saltiness from the 'juice', and a pleasant 'pop').  The tortilla strips were stirred in at the last minute because they disintegrate if you cook them much.  If I had any fresh cilantro or sour cream it would have gone on top as a garnish.  Cheese would be delicious there, too. 

Take a look in your fridge and see- what can you do to give those leftovers another shot at life?

Leftover Tortilla Soup  the way I made it.  Feel free to improvise; that's what this is!

10-12 corn tortillas, cut in 1/2" wide strips
1 quart water
1 (14 oz.) can whole kernel corn, WITH the juices
10-16 oz. salsa or similar
1 cup of chili or 1 (14 oz.) can of beans
2 cups cooked diced chicken or turkey

Spread tortilla strips on a baking sheet, put them in the oven about 8" under the broiler, just long enough to toast them a bit, about 2-8 minutes, depending.  (The idea is that if they're toasted, they might not disintegrate as quickly in the soup.  I might be wrong.  They at least have a better flavor when toasted.)

Combine the water, corn, salsa, beans/chili and chicken/turkey in a 3-quart or larger pan.  Bring to a boil, then simmer for 10 minutes to combine flavors.  Remove from heat and stir in tortilla strips.  Taste, then add salt and pepper if needed.  If it needs more flavor, a little lime juice, chopped cilantro, chicken bouillon, or chili powder would taste good.

Extra-moist bread

Just about everyone seems to know about potato bread, or potato rolls, and how moist and tender they are.  There was even a while when mashed potatoes were added to raised doughnut dough (which is essentially the same as roll dough anyway); the finished product ones were called "Spudnuts".  Potatoes aren't your only option here, but here's how to use them:

Adding about 1/2 cup of mashed potatoes for every 3 cups of flour in the recipe seems to be about as high as you'd want to go.  Potatoes don't have gluten, so adding too much would result in a dense, heavy bread.  I like to reduce the water in the recipe by about 1/4 cup for each 1/2 cup of mashed potatoes, since they have a lot of water in them.  You can use the basic bread recipe for this, or any other one you like.  If you don't have mashed potatoes, add potato flakes in place of some of the flour.  Even using the water you cooked potatoes in, as the liquid in your bread, will help with moistness.

You can make a 'fully loaded' potato bread by adding some sour cream (reduce your water again!), bacon pieces, cheese, chives, or whatever else.  See TheFreshLoaf for one version of this.  Just remember- adding high-water ingredients- like the mashed potatoes, or sour cream- will require you to either reduce your water, OR add more flour.  Adding mix-ins, like the bacon, cheese, chives, etc, doesn't affect the dough.  However, it's easier to knead the bread without them, so add them last.

Now- for more options-

Use other purees!  Use up to the same ratio as above, for the same reason.  This will work best if the purees are warm, to help the dough's yeast grow.  110-120 degrees F is ideal.

-Mashed pumpkin- plain (which you won't taste), or with some cinnamon and pecans added!
-Mashed sweet potato
-Pureed fruit - good for using up overripe things, or old bottled fruit that's turning darker (as long as the jar's still sealed).  You might want to reduce the sugar in the recipe; too much actually slows down (but doesn't kill) the yeast.
-Pureed vegetables- I've used green beans (up to 1-2 cups puree in the 6-loaf batch), pureed corn, chiles, olives, carrots, etc.  Unless you want that particulat flavor, though, its best to avoid the cabbage/broccoli/cauliflower family.   Just remember to reduce salt if you're using salted veggies, reduce by 1/4 tsp. for each cup of puree.
-Mashed cooked beans or other legumes.
-Cooked hot cereal- this includes leftover breakfast oatmeal, cooked 7-grain cereal, Cream of Wheat, cooked millet or amaranth, or whatever you happen to have.  I've even added an abandoned, soggy bowl of cold cereal before.


This is a good way to use up little bits of (clean) leftovers- imagine the flavors of bread you can create!  Just keep in mind that if you add something that has meat in it, you'll need to refrigerate the finished bread.

Two-way Tartar Sauce

Have you ever made tartar sauce?  It's simple, delicious, and has only the ingredients YOU put in it!  (No questionable preservatives, etc.)

Homemade Tartar Sauce

½ c. mayonnaise
1 T. chopped pickles (or use pickle relish)
1 T. minced onion
1 T. lemon juice
salt & pepper to taste

This is best if chilled at least 30 minutes, but still good if eaten right away.   Makes about 2/3 cup.



Now, how often do you really use all  of that tartar sauce?  You can stir it with a couple boiled and cubed potatoes, to make it into potato salad, or try this.....

Second-Day Tartar Sauce-      Ranch Dip!

To a half batch of tartar sauce (about 1/3 cup), add

1/4 tsp. dill weed
1/4 tsp. parsley
1/4 tsp. onion powder (recipe here)   
         or 
1 ½ tsp. minced chives
a dash of garlic powder, opt.

Voila!

There were NO leftovers this time.  :D

How to eat well and still spend less; Quick & Cheap Meals

Hi everyone,

Does it always seem like too much of your budget goes to food?  Do you wonder what amount of money is 'normal'?  If so, go to the Official USDA Food Plans pdf.

This page will give you the 2010 averages, based on nutritionally balanced diets cooked at home.  Now that you see how frugal you really are, here are some tips to help even more; pick just one or two to try so it's not overwhelming. Then all that's left is deciding how that new-found money is going to better use!

Ways to eat well on less money:

*Buy on sale and get extras so you never pay full price.

*Buy the fresh fruits/veggies that are $1/lb or less.

*Find ways to throw away less- only serve up what you will eat, save wilted veggies in the freezer for soup later, re-purpose leftovers.

*Use meat mostly as a flavoring (mixed in with other ingredients), not as its own dish.

*Buy meats that you can get for $2/lb or less, or whatever is bargain-price for your area.

*When you buy meat, get a bunch on sale, then cook it all at once.  Package and freeze most of it for future, faster, meals.

*Buy flour, sugar in bulk, make more things from scratch.

*Keep your kitchen clean so you like being there!  (You don't need to do it all yourself!  Doing dishes 'all the time' causes depression for me- once I added that to my kids' job charts, I felt much better!)

*Grow a garden where you used to have some lawn- you get the same water bill, more food.  Packets of seeds can last 4-5 years if kept cool and dark.   Or split packets with a friend.  

*Make your own bread instead of buying it.

How much can you save on bread?  Cost varies by recipe, but mine comes out to less than $ .50 per loaf ($. 42), including the electricity for baking, for top-quality whole-wheat bread.  (Well, frankly, the quality varies by week....)   If you eat two loaves a week, that saves you $200/year when compared to $2.50/loaf of bread.   We go through 6 loaves a week, so we’re saving over $600 per year.  Yes, a stand mixer and grain mill  definitely pay for themselves!  For the recipe I use, see Basic Bread on my website.
 
Yesterday the Teachers' Quorum (14-15 yr. old boys) came to my house for their weekly activity.  They've been learning about nutrition and safe food handling, so they all pitched in and cooked a meal.    Their handout included budget-friendly, adaptable, and fairly fast recipes; the kind that would be especially valuable when in college or on missions.  For these recipes, click on Quick & Cheap Meals.  The boys did great with them, I think you'll like them, too.

First I need to make a clarification from last week- for those of you wondering what “wheat berries” are, that’s just the chef’s term for what we simply call WHEAT.   Uncooked, whole, wheat; what we buy in those 25- or 50-pound bags.

Banana Pops

Slice bananas into disks.

Roll banana discs into PLAIN yogurt (you can use vanilla yogurt or other flavored yogurt; it's just sweeter)

Add any kind of topping you wish. We rolled our disks in chopped pecans. I know that's expensive, but we love pecans so much. After freezing these we ate them and you wouldn't believe the taste! It was like eating a frozen candy bar. Okay, maybe not that good, but they were sweet and refreshing, and I didn't have to put a limit on how many the kids could eat.

Other toppings that work well: chopped raisins, granola, any kind of nut (cashew, peanuts, almonds), peanut butter (this would be without the yogurt), and of course, melted chocolate or chocolate chips.

My son is not a fan of bananas, but he really liked this treat. You can even eat them plain. Oh, yeah, another topping we did was a cinnamon/sugar mixture. Believe it or not, it was good too!

I will warn you that it's messy because of the yogurt. And super messy if the kids help! But you don't have the guilt of giving them something unhealthy, and it's a cheap "popsicle."

Are you ready to vote? I felt I should share some statements our church leaders have made.  Below, you will find some great web resources to help you be informed on the candidates, ballot items, and judges in our area.  I’m sure there are more out there; these are the ones I’m aware of.

Joseph Smith said: "Even this nation will be on the very verge of crumbling to pieces and tumbling to the ground, and when the Constitution is upon the brink of ruin, this people will be the staff upon which the nation shall lean, and they shall bear the Constitution away from the very verge of destruction."  In other places, Joseph referred to this time being when the Constitution would hang by a thread.  What is this last thread that is holding up the Constitution?  President Ezra Taft Benson told us that this “our franchise (a right granted) to vote."

John Taylor said that the Elders of Israel (remember that women couldn’t vote, yet) should “understand that they have something to do with the world politically as well as religiously, that it is as much their duty to study correct political principles as well as religious” (Journal of Discourses, 9:340)


“It is time, therefore, that every American, and especially every member of the priesthood, became informed about the aims, tactics, and schemes of socialistic-communism. This year there are four proposed amendments to the Utah Constitution, a number of races including the State Board of Education, a proposition for a bond, and 37 judges to vote on. If you go to https://vote.utah.gov/  you will find a box at the bottom of the page that says "What's On My Ballot?".  Click on this and it will ask you some basic questions that verify if you are a registered voter.  After this, it takes you to a screen that shows exactly what will be on your ballot when you go to vote.  There are lots of links there to learn more about everything on your ballot.

As for voting on the judges, they each have a 'scorecard', found online on the Utah Voter Information Pamphlet, staring on page 37.  The scores are determined by the Utah Judicial Council, see http://www.utcourts.gov/committees/members.cgi?comm=1 for who this includes.  Please read what their definitions are, because that affects the judges' scores (for instance, their definition of 'integrity' doesn't completely match mine).     Good luck, do your homework, and go vote!

"After the kids are done Halloweening, I grab 24 candies for each child to save for a countdown to Christmas instead of buying the calendars in the stores. I usually keep them in a bag but you can get the kids to decorate shoe boxes or stick the candy to a calendar with tape."

 
Candy Bar Milk Shakes

1 cup mini candy bars, chopped
2 cups (1 pint) ice cream (chocolate or vanilla)
1/2 cup chocolate syrup
1 1/4 cups milk

Chop candies in a blender or food processor.   This is easier if they are partially frozen. Add the rest of the ingredients. Mix until blended. This makes a thick shake. Add 1/4 cup milk for a thinner shake. Makes 2 milkshakes, about 16 oz. each, or 5 shakes if you make them 6 oz. each!

Rescuing old, stale bread; sustaining ourselves

This week I’ve got a couple recipes to help you ‘re-purpose’ some of that bread that might otherwise end up in the garbage.  If it’s dry, great!  If it’s crumbling, great! If it’s stale, perfect!  The only time you don’t use it is if it’s moldy.  Even then it’s still good for the compost pile, if it’s in an enclosed container to keep out rodents.  Meanwhile, here’s some food for thought from Brigham Young, one of the most practical of people.

“My faith does not lead me,” President Young said, “to think the Lord will provide us with roast pigs, bread already buttered, etc.; he will give us the ability to raise the grain, to obtain the fruits of the earth, to make habitations, to procure a few boards to make a box, and when harvest comes, giving us the grain, it is for us to preserve it—to save the wheat until we have one, two, five, or seven years’ provisions on hand, until there is enough of the staff of life saved by the people to bread themselves and those who will come here seeking for safety. … [The fulfillment of that prophecy is yet in the future.]

Today’s recipes give you a couple good ways to not waste that dried-out, stale, or crumbly bread.  We have a little problem at our house with the heels of the bread- somehow I always find a heel or two in a bag at the back of the cupboard, dried out by then, of course.  Those either get turned into croutons or French toast right away, or get stuck in my ‘old bread’ bag in the freezer.  When I have enough, we make stuffing or bread pudding.



Homemade Croutons

 Cut bread into cubes and turn it into croutons: either sauté in, or drizzle with, olive oil or melted butter (1 Tbsp. for each 1-4 slices),  sprinkle with garlic powder, onion powder, dill, oregano, parsley, Parmesan cheese, ranch dressing mix (1/2 pkgs per loaf of bread), or anything that sounds like a good idea. Bake at 350 degrees for 15-20 minutes, or until dry and crispy.  Spread on a paper towel to cool, store when cool in a ziptop bag.  They’ll keep for a good couple of weeks, if you don’t eat them first.

The ideal bread pudding is custard-y and creamy inside with a little bit of crunch on the outside. 
Basic Bread Pudding

12 slices bread, cut in 1” squares, (the more stale, the better! – or bake them)
½ -1 cup raisins, soaked, optional
1 Tbsp. cinnamon
3-6 eggs (less makes it more dry, more makes more of a custard)
¾- 1 ½ cups sugar, to suit your tastes, white or brown
¼ cup butter, melted
2 tsp.vanilla
½ tsp. salt
3 c. hot milk- ideally half-and-half, or one 12-oz can evaporated milk and 1 ½ c. milk
pinch ground nutmeg

 Mix together the bread, raisins, and cinnamon.  Dump into a 9x13 pan.  Using the same bowl as before, beat the eggs, then stir in sugar, butter, vanilla, and salt.  Mix until sugar dissolves.  Slowly mix in the hot milk.  Pour all of this over the bread, sprinkle with nutmeg, and let sit for 5-20 minutes to soak.  Bake at 375 degrees for 25-30 minutes, until center is set and a knife inserted in the center comes out mostly clean.  If you bake this in a hot water bath, it will come out more custardy.  Serve warm.  Very nice with a dollop of whipped cream, scoop of ice cream, or a drizzle of some kind of sweet sauce (vanilla sauce, caramel sauce, rum sauce, maple syrup, etc.)

 Variations: Use any dried or chopped fruit in this, (this is a great way to use those two lonely, shriveled apples sitting on your countertop!), shredded coconut, cocoa or melted chocolate (2-4 squares), chocolate chips, pecans or other nuts, rum extract, orange extract or zest.

For the liquid, you can substitute eggnog, hot chocolate, coconut milk, and about anything that sounds good.  One great combination is shredded coconut with chocolate milk..... 

 Even if you think you don’t like bread pudding, you’ll probably love this one:

 Caramel Bread Pudding- fills a 9x13 pan

15 slices good-quality white bread, cut into 1” pieces (about 16 cups)- baked until crisp (about 10 minutes at 450 degrees)
1 ½ sticks butter
2 cups light brown sugar
1 cup heavy cream or evaporated milk
¼ c. corn syrup or honey
5 tsp. vanilla, divided
3 c. half-and-half, or use  the last ½ cup evaporated milk from your can (above),use whole milk for the remaining 2 ½ cups here.  
5 large eggs

 

Melt butter and sugar together in a saucepan on medium-high heat.  Stir about 4 minutes, or until bubbly and golden.  Remove from heat and stir in cream or evaporated milk, corn syrup, and 2 tsp. vanilla.  Pour one cup of this caramel into a greased 9x13 pan.  Set aside one more cup of caramel, to use as topping later.  To the remaining caramel, add the half-and-half (or mixture of evaporated milk and whole milk).  Beat the eggs together, then whisk in the half-and-half mixture a little at a time.  Add remaining vanilla.  Fold in the bread, and let sit until soaked through, about 20 minutes. Meanwhile, heat oven to 350 degrees. Put bread mixture into the 9x13 pan, bake about 40-45 minutes, until the top is crisp and the custard is barely set.  Serve warm, with the reserved cup of caramel drizzled on top.

Year's Supply quantities, Roast Chicken Dinner with rice, and apple crisp

"We encourage members world-wide to prepare for adversity in life by having a basic supply of food and water and some money in savings.” “For longer-term needs….gradually build a supply of food that will last a long time  and that you can use to stay alive” (from All is Safely Gathered In, First Presidency pamphlet)

Here is what a basic supply of food includes:  it will provide about 2200 calories a day, which means you’ll probably get 1800 and your husband will get 2600.  This is less than most people are used to, especially if you're suddenly living a 'more active' lifestyle, but it will keep you alive!

300 lbs grains- includes Wheat, Rice, Rolled Oats, Dried Corn, Popcorn, Flour, Pasta Products, Dried Potatoes.  Some lists say 400 lbs per person, but the current Church site says 300.  Take your pick, according to what you can handle.  Storage-wise or hunger-wise; that extra 100 lbs provides an extra 435 calories per day.

16 lbs. powdered milk- this is just enough for cooking, about ¾ cup per day.  You can store instant, regular powder, and canned milk.  It takes about 5 (12-oz) cans to equal one pound of powdered milk

60 lbs sugar- this includes white sugar, brown sugar, powdered sugar, honey, molasses, jam/jelly, corn syrup, fruit drink mix, gelatin.  If you have honey that crystallizes, set the bottle in the sun on a warm day, or put it in a pan of water on lowest heat overnight.  It will become liquid again.  You will want more sugar than 60 lbs. if you can your own fruit.

10 quarts cooking oil (2 ½ gallons)- yes, YOU NEED FAT.  Your brain is made mostly of fat.  Guess what happens if you don’t get any fat in your diet?  Plus, it’s a lot of calories for very little storage space.  The darker & cooler you keep it, the longer it lasts.  Fats include shortening, cooking oil, butter/margarine, mayonnaise, peanut butter.

8 lbs salt per person-  this is the cheapest of them all!   In addition to the round canisters, you can buy salt in 4-lb rectangular boxes; these stack together more efficiently.  At Sams’ Club, these boxes are just under $1.  Woo-hoo!  Two bucks and you have your personal salt for the year!

60 lbs. legumes, dried- includes soybeans, pinto beans, white beans, kidney beans, lima beans, anything that ends with ‘bean’ (unless it begins with ‘jelly’), black-eyed peas, split peas, and lentils.  These are a great, inexpensive source of protein.  Store the same as wheat- dry, clean, dark and cool  if possible. It takes 4 ½ (15 oz) cans to equal one pound of dry beans.

14 gallons water per person.  This is just 2 weeks’ supply, for drinking and a tiny bit for washing; the minimum our church leaders have counseled.  You may also want a way to purify water for longer-term use.  To purify, you can boil water for 2 minutes, or use chlorine bleach (plain only, not scented!)  If the water is clear, use ½ tsp. per 5 gallons of water.  If the water is cloudy, use double; 1 tsp. per 5 gallons of water.

Children do not need a full adult’s portion.  For them, figure age 3 and under= 50%, ages 4-6= 70%, ages 7-10= 90%, ages 11 and up= 100%.

Obviously, kids' ages are always changing, so when I calculate what to have on hand ( I inventory every Conference), I project out six months to a year. For instance, if someone is 6 years old, I count that child as 7 years. That way I'm not always slightly behind when it's time to replenish.

Recipes today are for a whole meal….

Roast Chicken               From Living On a Dime, Jan 2010.  
Here is a very basic but yummy recipe. You can also put this in a crock pot to slow cook all day.


1 (3 lb.) whole chicken
Salt and pepper to taste
1 Tsp. onion powder
1/4 cup butter or margarine 
1 stalk celery, leaves removed

Season the whole chicken inside and out with salt, pepper and onion powder. Place breast side down in pan placing margarine and celery into cavity. Bake at 350° for 1 hour and 15 minutes or until internal temperature is 180° (82° C). You can baste with juices or melted margarine once or twice. Remove from oven and cover with foil for 30 minutes and let it rest before cutting.

You can easily adapt this recipe to your own likes and dislikes. For example, you might use garlic powder instead of the onion powder, you could slide slices of lemons or garlic cloves or even onion slices under the skin. Try other seasonings, too.

The main thing that makes this recipe great is cooking it breast side down, which makes it extra juicy.

Cheesy Peas and Rice

2 1/4 cups rice, cooked                                              
1 (10 oz.) pkg. frozen peas, thawed

1 (6 oz.) can of mushrooms, drained                          
6 oz. Velveeta, cubed*


Combine all the ingredients in a greased 1 1/2 qt. baking dish. Cover and bake at 350° for 20 minutes.

I didn't used to buy Velveeta because it was more expensive than other cheeses, but since it is the same price or less than cheddar now, I buy it more often.


Apple Butterscotch Crisp

This recipe is good served with ice cream or, for something different, try a slice of cheese or a dollop of sour cream.

 5 large (7 small) apples, sliced and peeled               
1 tsp. cinnamon

1 cup brown sugar, depending on your apples           
1/2 cup flour

1/2 cup quick cooking oatmeal                                      
1/2 cup butter or margarine, cold                                     

1 pkg. (3.5 oz.) cook and serve  
          
butterscotch pudding


Place apples in a greased 9x13 pan. Mix everything else in a bowl, cutting in* the butter until it resembles coarse crumbs. Sprinkle over apples. Bake at 350° for 40-45 minutes or until apples are tender.

You can leave out the butterscotch pudding; it won't throw off the recipe. It will still be delicious. 

*Whenever a recipe says to cut in something, that means to take a pastry cutter and mix the butter, margarine or shortening in with the dry ingredients until the mix gets crumbly looking. (I just use my fingers. It is easier for me to wash them than a pastry cutter.)

Roast Chicken Leftovers:

Chicken Spaghetti Bake-  Make your favorite spaghetti, mixing noodles and sauce. Instead of adding hamburger to it or leaving it without meat, add some cubed leftover chicken. Put it in a 9x13 greased pan sprinkle with mozzarella cheese and grated Parmesan cheese. Bake at 350° until heated through and cheese is melted.

Make Chicken Soup with leftovers- see the recipe for turkey soup.  Use ¼ the amount of water and spices for chicken because it’s so much smaller!

Leftover Leftovers- If you have any of this soup left, thicken it with a little cornstarch or flour mixed in water. Make a batch of biscuits or use any leftover biscuits you have and pour the thickened soup (now like gravy) over it.

Our divinely inspired Constitution, easy homemade pizza

 Happy Constitution Day!   It was signed on September 17 in 1787. For a wonderful article on it, see “The Divinely Inspired Constitution”, Dallin H.  Shifting over to food now, are you finding enough things to do with all the wonderful produce right now?  I had to laugh when I saw a big, abandoned zucchini right in the middle of the road last week.  All those urban legends came to mind about people’s desperation to get rid of the squash.  (Freeze it!  Dry it!  Slice it and pretend it’s pasta in recipes!)

 I have two main recipes I make when I need to use up odds and ends:  soup, and pizza.  You can make pizza just about as fast as running down to Little Caesar’s, and it’s much better.  I make a batch of bread every week (the six-loaf batch holds us, and fills the oven), and as often as not, bread-baking day is Pizza Day.  This way I already have the dough, so it’s a no-brainer for dinner.  If you make the dough in the morning, you can keep a chunk in the fridge until almost dinner time.  If you’re making the dough that afternoon, you can let it rise, punch it down, let it rise, punch it down,….repeat until you’re ready for it!  Or even just use it without letting it rise first.   One loaf’s worth of dough (1 to 1 ½ lbs) is a good amount to fill a 12x18 cookie sheet.  To keep it from sticking to the pan, either grease or oil it, or sprinkle it with cornmeal or Cream of Wheat (coarsely ground wheat).  If you like a crispy crust, preheat the cookie sheet with 2-3 Tbsp. olive oil on it.  Or bake it on a  pizza stone.  Roll the dough out, and bake it at 425 degrees (really, any temperature between 325 and 450) until it’s just set (no longer doughy), then add toppings and bake or broil until the cheese is melted.  You can even bake some crusts ahead of time; bake for 5-10 minutes at 425, cool, wrap, and freeze.  The Basic Bread recipe is also posted on this site.
 

My basic pizza sauce is:  

one (8 oz) can tomato sauce

garlic powder (1/2 tsp.) or minced garlic (1-2 cloves)

a couple shakes of black pepper

spices: total of around 1 tsp. of whatever sounds good- oregano, basil, thyme, fennel seeds (great but go LIGHT on this one), rosemary

 
But what it really looks like, when I cook, is: open one can of tomato sauce, and to the top of the can add a couple shakes each of garlic powder and black pepper (if I feel like it), and then a few shakes each of 2-3 kinds of my ‘green spices’ (the ones listed, above).  Stir it, kind of, then spread it on the baked crust.  Sometimes I have part of a jar of spaghetti sauce sitting in the fridge.  That makes a good pizza sauce, too. So does barbecue sauce.  Or Alfredo.  Whatever you have that needs used.

 
If you have a bunch of tomatoes, you can use a bunch of them on the pizza, sliced or diced,  and skip the sauce.  You already know the standard toppings; other topping ideas are:

-       Shredded zucchini (yes, really.  Especially if it’s hidden under the cheese)

-       Shredded carrots (hides  especially well under Cheddar)

-       Chopped up spinach or chard leaves

-       Onions or green onions,  bell peppers

-       Leftover bits of meat  (whatever lonely thing is sitting around gets added to our pizzas)- ham, deli meat, bacon, summer sausage from last Christmas (those things last forever!), crumbled hamburger patties, chicken, etc.

 
And of course you can always look at your favorite pizza chain’s menu to get more topping ideas.

                                               
You can also make breadsticks or dessert sticks/pizza out of the dough.   To make simple breadsticks, roll out the dough, cut into strips with your pizza cutter.  Bake, then brush with melted butter, sprinkle with Parmesan and garlic powder.  Dip in spaghetti sauce or pizza sauce.  For dessert sticks, roll and cut them the same, but roll in melted butter and then in a mix of cinnamon and sugar.  Then bake.  Dip in applesauce or drizzle with glaze (1 cup powdered sugar, 1 tsp. vanilla, and 1-2 Tbsp. milk or water)
